I cured a slab from a bottom blade for St Patrick's day, but in the end it was not cooked, we had ribs. Can I keep it til next weekend, or freeze it? It is stiff and refreshed in my fridge now.

There's a saying in the industry: "if in doubt, throw it out". Given that the meat wasn't cooked, I'd rather see you dispose of it than get sick.
