Hi Mr. Zane, I watch an episode of Diners, Drive-ins and Dives that featured your Deli, my question is would you please give me the recipe for your corn beef brisket or one close to it and I can make from my own kitchen. I've never fixed corn beef brisket but, I would love to try using your recipe. Thank You Tamara Kreisler (Buford GA. USA)

You should be able to find a product called Morton's Tender Quick. It's a curing salt. Simply rub a brisket with Tender Quick and put the brisket in your fridge for 2 weeks. Flip it over every day. I'd also recommend that you add a dry rub. We sell ours but don't give out the exact recipe. It includes black pepper, garlic, onion, red chillis, corriander seed, mustard seed, celery seed and brown sugar. After 2 weeks rinse off the brisket and leave it overnight in the fridge uncovered. In the morning, load it into your smoker and reapply the dry rub. For a 10 lb brisket, smoke fat side down for 12 hrs at 195 degrees. Slice against the grain. Enjoy, ma'am.
